Agreed. I'm a bit of a latecomer to Cheddar. Growing up, I never liked it - probably because my mum doesn't like strong cheese and would always buy the very mild Cheddar, which I still maintain has next to no taste. But there are some truly outstanding Cheddars out there.
I was in the UK last month and, as always, packed my bag with loads of cheese, including a couple of decent Cheddars. Bastard airline wouldn't allow a couple of kgs extra weight, so that fine Cheddar had to be jettisoned into a Gatwick bin. Lucky bin.
